A low Fat - Fish Curry with Steamed Rice Gives a Great Punch in Winters!

Ingredients:
1 kg or 10 pieces of surmai fish
1 medium        onion
350 grams         yogurt
1 levelled tsp   Fenugreek seeds(methi dana)
1 levelled tsp   Turmeric powder
2 levelled tsp   Red chilli powder
1 levelled tsp   Garam masala powder
1.5levelled tsp Salt
7tbsp Oil

Method:
Crackle fenugreek in oil. When it starts to turn reddish... turn the flame off... hold the lid in one hand and pour the blended onion into it and cover it up. It will yell and scream because the pan is hot. When it calms down... turn on the flame and cook the onion only till you feel the raw look and smell has gone away. Dont golden or brown it.

Now add the masalas and garlic paste mixed in a bit of water  unto the pan. Keep the flame medium. Not low not very high. Sauté the masala for a bit... till it gets fragrant. Now spread the fish pieces in the pan. I prefer a flat base big pan so that the fish pieces dont over lap and are set into the pan. Now let the fish cook for 5mins on one side. Now with the help.of two spoons.. turn the pieces on the other side... let cook for 5 to 7 mins... now put in beaten yougurt and hold the pot with two pot holders and move the yogurt around. When u feel the yogurt is well mixed and the oil is seperating... Your fish is ready!

You can cook it a little more if you want a thicker curry.Serve it with steam rice .
